Limburg an der Lahn
Give Limburg one night, not two: the old town and cathedral take half a day, and Frankfurt is 30 minutes by train.
Limburg an der Lahn is a small Hesse town on the Lahn river with a compact medieval centre, a seven-tower cathedral on the hill and a stone bridge from the 1300s. It sits on the ICE line between Frankfurt and Cologne, so it works as a single overnight stop or a half-day break between the two cities. The sights are within a 15-minute walk of each other; you do not need a car.
