Plasencia
Give Plasencia one night, two if you want the Jerte valley: the walled old town is a half-day walk, so it works as a stop between Cáceres and Salamanca.
Plasencia is a walled Extremaduran town of about 41,000 people on the River Jerte, founded in 1186 and still ringed by medieval walls. The historic centre around Plaza Mayor is compact and walkable in a few hours; the reason to sleep here rather than pass through is the Jerte valley and the Cáceres–Salamanca rail and road corridor. Most travellers give it one night, two if they want a valley day.
