Half a day is enough to see the Sheikh Ahmad-e Jami complex and the town. Use it as a stop between Mashhad and the Afghanistan border, not a base.
Torbat Jam is a small city in eastern Khorasan, known as the birthplace and burial place of the 11th-century Sufi mystic Sheikh Ahmad-e Jami. The main draw is his mausoleum complex, a collection of religious buildings and tombs. Most travellers pass through on the road between Mashhad and the border at Tabyad. One night is enough to see the sights and move on.
