Xàtiva
Go for one night, or as a half-day stop from Valencia: castle plus old town is 4–5 h on foot; two nights only if you want the castle at opening and a slow lunch.
Xàtiva is a small Valencian city of about 29,000 people with a hilltop castle above a compact old town, 49 minutes by regional train from Valencia. Most travellers see it in a day; one night lets you climb to the castle before the heat and eat arròs al forn without rushing back for a train.
