Dungog
Give Dungog one night, two if you hike Barrington Tops: it is a rail-end town with infrequent trains, so check the current Hunter Line timetable and plan around it.
Dungog is a small town of about 2,000 at the northern end of the NSW TrainLink Hunter Line, reached via Maitland and Newcastle. It is the practical base for the central Barrington Tops, with a walkable main street of pubs, cafes and a museum. Trains are few and slow, so the town suits a single overnight or a two-night hiking stop rather than a day trip.
