The routes step by step
Seven days: land in Tunis and stay 3 nights. Day 1 medina and Zitouna Mosque, day 2 Bardo Museum, day 3 Carthage and Sidi Bou Said by TGM train, ending in the blue village for sunset. Train to Sousse for 2 nights: one day for the medina and ribat, one for El Jem by train or louage (check). Metro du Sahel to Mahdia for 2 nights, then back to Tunis by train for the flight home.
Ten days: the same start, then fly or drive to Djerba for 2 nights (Houmt Souk, El Ghriba synagogue, beaches). Pick up a car on the island and drive south: 1 night in Douz for the dunes, 2 in Tozeur for the oasis, Chott el-Djerid and the film sets. Fly Tozeur–Tunis at the end if the schedule works (check). This is a tighter version of the parent 10-day plan, which gives Douz 2 nights and Tozeur 2.
Fourteen nights: add Dougga as a day trip from Tunis, a night in Kairouan between Tunis and Sousse, El Jem on the way south, then Djerba 3 nights, Tataouine 1 for Ksar Ouled Soltane and Chenini, Douz 2 and Tozeur 2. This is the version that covers the country without rushing.
Twenty-one nights: run the 14-night route and add the north — Bizerte and Tabarka, 2 nights — plus 2–3 extra nights on Djerba or in a desert camp and a final night in Tunis before the flight. Extra days are better spent slowing down than adding stops; the south rewards two nights per base.

Notes before you book
Transport shapes the itinerary more than distance does. The coastal train is cheap and comfortable between Tunis, Sousse and Monastir, and the Metro du Sahel reaches Mahdia; louages (shared vans) fill the gaps. South of Sfax, a car gives you the freedom to stop at Matmata, the ksour and the salt lake, and it is the only realistic way to see several sites in a day.
Season matters. July and August are hot and crowded on the coast; the desert is best from October to April, with cold nights in winter. Ramadan changes opening hours and restaurant rhythms, and many sites close early. Check opening days for the Bardo and El Jem around public holidays.
Sort the paperwork before the route: visa rules depend on your passport, and you will want cash for louages, small hotels and site tickets. Carry small notes for tips.
