Mekong Delta loop from Ho Chi Minh City
Ho Chi Minh City → bus to Cần Thơ (2 nights, dawn floating market) → bus to Châu Đốc (1–2 nights: Sam Mountain, Trà Sư forest) → back to Saigon by bus or on by Mekong boat to Phnom Penh. 3–4 nights, December–April, or September–November for high water.

The delta rewards nights, not day trips: the floating markets happen at dawn, the orchards and canals are best at the slow end of the day, and the Cambodian border towns feel different from Saigon. Buses are frequent and comfortable between the hubs; boats do the rest. The loop ends either back in Saigon or across the border, turning a detour into a way to reach Phnom Penh.
