One night off I-75 is enough: Wild Adventures plus a downtown walk. Two nights only if you are doing Grand Bay or golf.
Valdosta is a mid-sized south Georgia city on I-75, roughly halfway between Atlanta and Orlando, and most travellers meet it as a fuel-and-bed stop on that drive. The reasons to stop longer are Wild Adventures theme park and zoo, the historic downtown grid, and the wetlands at Grand Bay. Spring and autumn are the comfortable months; summer is hot and humid with afternoon storms.
