Go for 2 nights in Jul–Sep if you want a wide beach and surf; skip it in winter unless you are passing between Coimbra and the coast.
Figueira da Foz is a seaside resort at the mouth of the Mondego, west of Coimbra. It has a long promenade, a broad urban beach, a casino and reliable surf. Two nights covers the beach, the cape and the old centre; one night works if you are breaking the Coimbra–coast run. It is a summer town: outside Jul–Sep much of the seafront is quiet and some places close.

The city centre, beach and casino are walkable. AVIC runs a small local bus network for Buarcos and the outskirts; taxis cover the rest. A car helps for Cabo Mondego, Serra da Boa Viagem and the beaches north.
