Go for the castle, not the town: one full day from Gdańsk (30–60 min by train), or one night if you want the castle at opening.
Malbork is a small town built around one thing: the Castle of the Teutonic Order, the largest Gothic fortress in Europe and a UNESCO site. The visit runs up to 3.5 hours with the audio guide, so most travellers come as a day trip from Gdańsk and leave the same evening. Sleeping one night buys you the castle at opening and the riverside walk without a train to catch.
