Holbrook
Stop for 2–4 hours on the Hume Highway: the submarine and the pottery museum are the reason. One night only if you are breaking the Sydney–Melbourne drive.
Holbrook is a Hume Highway service town between Sydney and Melbourne, known for the preserved upper casing of HMAS Otway, a submarine parked in a park beside the road. The highway now bypasses the centre, so traffic has to choose to exit. Three small museums, two bakeries and a handful of motels make it a solid half-day break or a cheap overnight on the long drive.

The town centre is flat and walkable in about 10 minutes end to end. A car is needed for anything beyond Albury Street; the Hume Highway bypass sits east of the centre, so exit and rejoin via the signed ramps.
