How we chose
We kept picks that are specific: a named dish, a named city and a time of day when it is at its best. Anything that is only a category, such as 'Egyptian food', was left out.
Second, we weighted everyday eating over special occasions. Koshari, ful and ta'ameya are what Egyptians actually eat, they are cheap, and they are easy to find on a first trip. Pigeon and fatta are feast food and belong on the list too, but as one meal, not the plan.
Third, we checked the practical side: whether a vegetarian can eat well (yes, easily), whether alcohol is available (only in licensed places), and whether the pick works in the heat, in Ramadan, or on a Nile cruise. Prices are 2026 estimates and vary with the exchange rate.
When to go
Cooler months are the comfortable window for eating outdoors and for long days of walking between meals; midsummer heat pushes lunch late and makes heavy grilled dinners less appealing (check month-by-month temperatures before booking).
Ramadan changes the food day for a month: eating shifts to iftar after sunset, which is the best time of year to eat with a family if you are invited. Wait for the call to prayer before starting. During Eid, fatta is the dish. Restaurant daytime hours in Ramadan vary by city and venue (check locally).
Alexandria's fish is a year-round pick, but the corniche is at its best in spring and autumn. Desert camps and zarb dinners run in the cooler months; midsummer desert nights are still hot.
Getting there
Fly into Cairo International Airport (CAI), then eat your way through the city before moving on. Cairo and Alexandria are linked by train and road, and Cairo to Luxor or Aswan by flight or the overnight sleeper train; check current timetables and journey times before you book, and note that most Nile cruises feed you three times a day, so plan land meals around them.
For the Red Sea and Sinai, El Gouna, Hurghada and Sharm el-Sheikh are resort bases with hotel restaurants and bars; Dahab is the cheaper, more casual end. Desert camps near Siwa and in Sinai arrange their own transport and dinner.
