Give Burgos one night, two if you walk the Camino: cathedral and old quarter in half a day, Las Huelgas and Miraflores the next morning.
Burgos is a compact Castilian city on the Camino de Santiago, 240 km north of Madrid and 856 m up, so days are sunny and nights cold. The Gothic cathedral is the reason to stop, the old quarter is walkable in an afternoon, and two outlying monasteries fill a second morning. Most travellers pass through on the train or the pilgrimage trail; a night here is enough unless you are walking.
