The Western Cape works best from one bed: Cape Town has the sights, the food and the flights, and the winelands, the Peninsula and Hermanus are day trips of 1–2 hours each way. Weather runs the plan: wind can close the Table Mountain cableway in summer and rain moves the beach days in winter, so keep one flexible day.
