After that, pick by interest: food and market, architecture, or a half-day out to the Albufera lagoon for rice fields and paella.

The City of Arts and Sciences is the one big sight where a guide adds context rather than access. You can walk the outside for free and buy tickets per building on site; a guided version mainly saves you queue time and explains the design. If you only have one day in the city, choose the old town walk plus the City of Arts and Sciences over any bus loop.

Start times are set by each operator and change with the season, so treat any timetable as a guide and confirm the exact slot when you book. Walking tours commonly run a mid-morning and a late-afternoon slot and last about two hours. Food tours cluster around the Central Market and usually start before lunch, because the market winds down in the early afternoon. Cooking classes typically run a lunch or dinner session.
