Give Stanthorpe one full day plus one night: wineries and granite country by car, Mount Marlay lookout at sunset, then move on.
Stanthorpe sits on the New England Tableland at about 800 m, so it is cooler than Brisbane and the closest thing southern Queensland has to a wine district. The town itself is small; the appeal is the surrounding granite belt of cellar doors, orchards and national park. Two nights is the sweet spot, three if you want a full day in Girraween. Without a car you will see very little.
