Best time
Spring and autumn are the best windows: mild weather, working kitchens and no August crush. Summer works on the coast and in Galicia, but inland cities such as Madrid and Seville are hot at lunchtime and many city restaurants close for part of August. Winter is the season for cocido, fabada and calçots, and the north stays green and wet.

Getting there
Spain's high-speed network makes a food trip practical without a car. Madrid to Barcelona, Valencia, Seville and Córdoba is fast rail; Bilbao and San Sebastián are reached by rail or bus from Madrid, or by air. For Rioja, Logroño is on the rail line from Madrid and Zaragoza. For sherry, Jerez de la Frontera has its own station and airport.
