Give Soest one full day plus a night: walk the 1.2 km old town, its medieval churches and two-thirds of the wall, then leave before the funfair crowds.
Soest is a 50,000-person town 50 km east of Dortmund with over 600 listed buildings, a compact 1.2 km old town and six medieval churches built from local green sandstone. It survived the industrial era intact, so the reward is a walkable medieval core rather than a big-city stop. One night covers it; the Allerheiligenkirmes in November needs a different plan.
