Soave
Give Soave one night, or a half-day from Verona: the walled centre takes 2 hours, the castle 1–2 more, and the wine is the reason to stay.
Soave is a walled medieval town of about 7,000 people, 20 km east of Verona, ringed by vineyards that make the dry white wine of the same name. The whole historic centre sits inside the walls below a Scaliger castle. Trains stop at San Bonifacio, 5 km away, so most visitors come by car or bus from Verona. One night is enough to see the town, eat well and taste wine at a cellar; a day trip works if you keep to the centre and castle.
