Go for 2–3 nights if you want a quiet beach with no boardwalk: rent a house, drive 4 miles over the bridge from Eastpoint, and plan around one restaurant row.
Saint George is a barrier island on Florida's Forgotten Coast, reached by a 4-mile bridge from Eastpoint on US 98. There is one small town, a state park in the dunes, a rebuilt 1852 lighthouse and fewer than a half-dozen places to eat. Almost everyone rents a house rather than a hotel room. It suits travellers who want a low-key beach and are happy to drive for dinner, groceries and day trips.

Get around
A car is effectively required: there is no public transit on the island and the bridge is the only road in. From US 98 in Eastpoint take County Road 300 south over the Bryant Patton Bridge, about 4 miles to the island. Distances along Gulf Beach Drive are short but not walkable end to end, and the state park is at the far east end. Bikes are a good option for the flat island roads; bring or rent one locally.
