Orillia
Give Orillia one night, two if you want a lake day: it is a waterfront stop between Barrie and Muskoka, not a destination on its own.
Orillia sits between Lake Simcoe and Lake Couchiching, 35 km northeast of Barrie and about 1 h 30 min by car from Toronto on Highway 11. It works as a half-way stop on the way to Muskoka or Algonquin, with a walkable downtown, a lakeside park and two small museums. One night covers the town; two nights only if you are boating, fishing or using it as a base for Casino Rama.

Downtown, the waterfront and the arts district are walkable in 15–20 min. Orillia Transit runs five loop routes from the downtown terminal on West St and Mississaga St, roughly every 30 min on weekdays, with a cash fare of about $2.25 (check).
