Nouméa is the only city in New Caledonia and the base for everything else. The trips that go wrong land on a night flight with no transfer booked, or try to fit the islands into the same days. Keep one bed, book the airport transfer before you fly, and treat the Isle of Pines and the Loyalty Islands as separate trips.
