Give Nördlingen one night, not a day trip: walk the 2.6 km wall at opening, climb the tower, then sleep inside the gates.
Nördlingen is a small Bavarian town inside a 25 km meteorite crater, with a complete 14th-century wall you can walk right around. The old town is compact enough to cover on foot in a day, but the wall walk, the tower and the crater museum together justify a night rather than a rushed stop on the Romantic Road.
