Mudgee
Give Mudgee two nights with a car: a 3.5 h drive from Sydney, wineries are spread across the hills and taxis are thin.
Mudgee is a small Central West town ringed by extinct volcanoes and dozens of small wineries. The town centre is walkable in an hour, but the cellars, lookouts and national park walks sit on the roads out of town, so a car changes the trip. Most visitors come for two nights, three if they add Gulgong or a long lunch circuit.

The centre is flat and walkable. A local bus runs to surrounding suburbs four times a day on weekdays only. Wineries, national parks and Gulgong need a car, bike or a booked wine tour; taxis are limited, so book returns in advance.
