Lüneburg
Give Lüneburg one full day and one night: the Altstadt is walkable in 3–4 h, and it works as a base for the heath or a stop between Hamburg and Hanover.
Lüneburg is a medieval salt-trade town on the Ilmenau, 35 minutes by train from Hamburg and about an hour from Hanover. The old town survived the war almost intact, so the draw is the brick Gothic streets themselves rather than any single sight. Most travellers see it in a day; a night lets you add the Salü salt spa or use it as a gateway to the Lüneburg Heath.
