Guarda
One night, two at most: the cathedral, the old walls and the museum fill a day; use the rest for Serra da Estrela or the border castles.
Guarda is the highest city in mainland Portugal, at about 1,056 m on the edge of the Serra da Estrela, and the last big stop on the Beira Alta line before Spain. It is a cold, granite, working city rather than a resort: the Sé cathedral, a stretch of medieval wall and a good regional museum are the core, and the real reason to stop is the mountain and the castle villages around it. Most travellers give it one night between Coimbra and the Spanish border, or two if they want a Serra da Estrela day.
