Gaziantep
Give Gaziantep one full day for the Zeugma mosaics and the bazaar quarter; two nights if you add Halfeti or Nemrut. Skip the castle interior, closed for restoration.
Gaziantep is Turkey's fifth-largest city and the food capital of the south-east: pistachios, baklava and Antep kebabı are the reason many Turks come. The Zeugma Mosaic Museum holds the Roman floor mosaics rescued from a Euphrates town drowned by a dam in 2001, and it alone justifies the stop. The 2023 earthquake damaged the castle, several mosques and the archaeology museum, so check what has reopened before you build a day around it. The city works as a hub for Urfa, Mardin, Halfeti and Mount Nemrut, all reachable by road.
