Give Fallbrook half a day or one night as a stop between Temecula wine country and the Oceanside coast — not a base for a San Diego trip.
Fallbrook is a small inland town in North County San Diego, about 30,000 people, west of Interstate 15 at the Mission Road exit. It calls itself the Avocado Capital of the World and the surrounding hills are avocado groves. The draw is a compact Main Street with two small museums, a nature preserve and quiet, cheaper beds than the coast. It is also the east entrance to Camp Pendleton, so expect military traffic on the roads.

A car is close to essential: sights, groves and the preserve are spread along Mission Road and the back roads. North County Transit District (NCTD) runs buses into Fallbrook and on to Oceanside and Escondido, but service is thin and slow. Rideshare exists but waits can be long in the evening.
