Enkhuizen
Go for one full day and one night: the historic harbour and the Zuiderzee Museum fill a day, and the town is quiet by 18:00.
Enkhuizen is a former Dutch East India Company harbour on the IJsselmeer, about an hour from Amsterdam by train. Its 17th-century centre, the outdoor Zuiderzee Museum and the summer ferries to Stavoren and Urk make it a strong one-night stop rather than a base.
