Dubbo
Give Dubbo 2 nights: one full day for Taronga Western Plains Zoo, one half-day for the old gaol and the town centre. Skip it if you are not driving or flying in.
Dubbo is the hub of the NSW Central West, a four-hour drive or a daily train from Sydney, and it exists on most itineraries for one reason: Taronga Western Plains Zoo, an open-range zoo you cover by bike or car. The town itself is small and walkable, with a gold-rush-era gaol museum, a 1840s homestead and a good pub strip on Macquarie Street. Two nights is the honest answer; three if you add the observatory or a day trip to Mudgee or Parkes.
