Christchurch is a flat, compact city that was largely rebuilt after the 2011 earthquake, so the centre is quick to cover on foot. The decision is not how much city there is, but how many day trips you want from it.
One day: stay central. Two days: add Akaroa, Lyttelton or the Port Hills. Three days: add a longer run to the Alps, Kaikōura or a relaxed harbour and beach day. Driving beyond the city is the part that eats time, so count the hours before you commit.

Day 1: the city on foot
Start at Cathedral Square and the transitional-cardboard cathedral area, then walk to Riverside Market for coffee and lunch. The Avon River runs through the middle; punting and the Botanic Gardens sit a short walk west. The heritage tram loops the centre and is the easiest way to see the rebuild without a car.
Afternoon: cross to the Arts Centre and Canterbury Museum side, then walk or bus to the Christchurch Gondola base at Ferrymead for the Port Hills view. Finish in Lyttelton for dinner if you have a car or a rideshare.

Day 2: pick one day trip
Akaroa is the classic: a French-settled harbour town about 1h20 by road, with harbour cruises and a hill road that is slow but scenic. Lyttelton is the short option, 20 minutes over the hill, with a market, cafés and the gondola nearby. Kaikōura is a long day at about 2h30 each way, so only do it if whales or seals are the point of your trip.
If you would rather not drive, the TranzAlpine train leaves Christchurch for the Southern Alps and returns the same day; check the timetable and book ahead in summer.

Day 3: further out or slower
With a third day, either push into the Canterbury high country toward Lake Tekapo and the Mackenzie Basin, or take the coast north to Kaikōura. Both are long drives, so an overnight is better than a return trip. If you are staying put, use the day for the Botanic Gardens, the beach at Sumner, and a long lunch.
If Christchurch is the start of a longer South Island route, keep the city short and move on: the parent country plan suggests one night in Christchurch before Tekapo and Mount Cook.
