Give Bourke one night as a Darling River stop on the Kidman Way or Mitchell Highway; two nights only if you add Gundabooka National Park.
Bourke is the service town for a huge stretch of northwestern New South Wales, about 140 km south of the Queensland border and roughly 8 hours by road from Sydney. The Darling River, a replica wharf and the Back O' Bourke exhibition carry the history; Gundabooka National Park, 30 minutes south, carries the landscape. Most travellers pass through on the way to or from Queensland, Cobar or Brewarrina, and one night is enough unless the park is the point of the trip.
