Béziers is a working Languedoc wine town on a steep hill above the Orb, with a 13th-century cathedral, a Romanesque bridge and the Canal du Midi's Fonseranes lock staircase on its edge. It is small enough to walk in a day, cheap by French city standards, and useful as a quieter base between Montpellier and Narbonne. The 1209 massacre of the Cathars happened here, and the old town still reads as medieval lanes rather than a rebuilt centre.

The centre is walkable but built on a slope: the station-to-old-town climb is genuinely steep, so plan the uphill leg once, not three times.
