Bamberg
Give Bamberg one full day and one night: the whole old town is a UNESCO site and walkable in a day, but the beer cellars and cathedral reward a sleep-over.
Bamberg is a small Franconian city of about 77,000 people whose entire old town is on the UNESCO list, spared bombing in World War II. It is compact enough to walk end to end in under 30 minutes, so the trip is about the cathedral, the bridge town hall and smoked beer, not about covering ground. Most travellers see it as a day trip from Nuremberg and regret not staying for the evening.

- Sandkerwa (last weekend in August) fills every bed in town: book months ahead or stay in Nuremberg.
Bamberg is a low-crime, walkable town; the real risks are cobblestones after rain, bicycles in the old town, and drinking strong smoked beer before the uphill walk home.
