Baldock
Skip unless you have a specific reason to stop: 30 min from London by train, but the town offers half a day of sights at most.
Baldock is a small Hertfordshire market town with a 13th-century church, a local museum and two nature reserves. It works as a short stop on a rail trip from London to Cambridge or the north, but has no reason to stay overnight.
